  1. Cortamos todas las verduritas en taquitos muy pequeños. Mientras tanto, cuando estemos acabando de cortar, calentamos de dos a tres cucharadas de aceite de oliva virgen extra en una sartén o cazuela baja.
  2. Rehogamos las verduras hasta que se doren, y una vez ésto, añadimos tres cucharadas de tomate triturado, y removemos un poco.
  3. Añadimos el arroz, removemos y enseguida echamos el caldo de pollo y el vino blanco. Si con ésto no se cubre todo el arroz y las verduras, pues añadimos agua, la cantidad necesaria y justa para que quede todo cubierto y empiece la cocción.
  4. Bajamos la temperatura hasta la mitad, aproximadamente. Personalmente prefiero que el arroz se bata haciendo poco a poco. Enseguida notaremos como hay que volver a añadir agua,y como el arroz va aumentando de volumen. Cuando ésto suceda, es el momento de agregar el pollo.
  5. Añadimos unas hebras de azafrán, o bien un poco de algún sobre de preparado de especias para paella, los cuales suelen incluir sal, pimentón, azafrán y algo de curry. Éstos sobres pueden ser muy útiles y fácil de encontrar en cualquier tienda o supermercado.
  6. Vamos probando el arroz de vez en cuando para ver cómo está y en cuanto comience a estar algo blandito, se añade las judías y los guisantes congelados. Al final del todo, cuando el arroz esté hecho y solamente queda reposar es cuando se añade la lata de atún en conserva.
  7. Reposar encima de una una tabla de madera preferiblemente, con un trapo (limpio), encima de la sartén o cazuela durante 8 minutos. Transcurrido ese tiempo, quitamos el trapo, añadimos limón al gusto y servimos.
