- Añadí al arroz parte de la escalivada, la carne de la berenjena, un cuarto del pimiento rojo, medio tomate y 1/2 cebolla. Todo ello lo partiremos en trocitos pequeños e incorporaremos al arroz. Incorporaremos una cucharada de parmesano removeremos todo bien y por último rellenaremos nuestra berenjena.
- Por encima pondremos el queso filo y gratinaremos en el horno a 250 °. Una vez gratinado solo queda servir y comer
