- Pelar y picar la cebolla y zanahoria. Pelar el ajo. Lavar, secar y picar el pimiento rojo y verde. Sofreír en un caldero la verdura y bacon, añadir el adobo, remover. Añadir el caldo colado y salsa de tomate, remover.
- Añadir la berenjena, remover. Dejar cocer la berenjena durante 5 minutos. Añadir el pollo, remover. Dejar cocer el pollo durante 10-15 minutos. Dejar reposar el pollo durante 5 minutos. Presentar en un plato llano el estofado de pollo acompañar con papas fritas. Servir.
