- Primero de todo prepararemos las berenjenas. Las lavamos, les quitamos el tallo de arriba y las cortamos a rodajas de medio centímetro. Seguidamente las pondremos durante 15 minutos en un colador y las salaremos para así eliminar su agua.
- Mientras, prepararemos la salsa de tomate. En una sartén grande ponemos la mantequilla junto con un poco de aceite, y ponemos el ajo y la cebolla previamente pelados y picados finos.
- Cuando veamos que coge color, añadiremos la harina y mezclamos bien hasta que la harina se haya integrado.
- Añadiremos el tomate que habremos rallado, una cucharadita de pimentón picante, albahaca picada y sal y pimienta a nuestro gusto.

- Lavamos y secamos la berenjena que teníamos escurriendo, pasaremos las rodajas por harina y en otra sartén, las freímos en aceite de oliva bien caliente hasta que estén doraditas, las sacamos y las ponemos en un plato con papel de cocina para que absorba el exceso de aceite.
- Encima distribuimos queso parmesano rallado y un poco de pan rallado.
- Encima pondremos salsa de tomate y encima mozzarella a rodajas, y a partir de ahí volvemos a repetir todo el proceso hasta que se nos acaben las berenjenas y la salsa de tomate: capa de berenjenas, capa de parmesano y pan rallado, capa de salsa de tomate y capa de mozzarella.
- En un molde para horno, lo pincelamos con un poco de aceite en el fondo y ponemos primero una capa de berenjenas.
- Arriba de todo y encima de la última capa de mozzarella, pondremos más queso parmesano para que nos quede
bien gratinado. - Metemos en el horno a 180º durante unos 20 minutos, tiene que quedar bien gratinado, servir caliente. Está espectacular!
