Echar en una cazuelita o paella con aceite, tomillo y sal.Normalmente faltaria azucar, pero en este caso perseguimos una salsa un poco acida. 20 minutos fuego lento. Añadir casi al final el pimenton.
- Al sofrito de cebolla añadir el calabacin cortado a dados. Al cabo de 10 minutos, la salsa de tomate. Echar un poco de agua. Dejar a fuego lento
- Retiramos del horno las berenjenas, quitamos la piel y las ponemos en el triturador, conjuntamente con dos cucharadas de salsa tahini. Hay que batirlo y echar una copa de jerez para espesarlo.
- Echar el batido a la salsa de tomate. Xup, xup, fuego lento 15 minutos. Retiramos, mezclar con los macarrones bien escurridos. Espolvorea y al horno para gratinar.
