- Pasado ese tiempo yo las enjuago. Me gusta quitarles la sal. Ponemos a calentar en una olla 50% agua y 50% vinagre. Cuando empieza a hervir echamos las berenjenas para que hiervan SOLO 3 o 4 MINUTOS. (Que no se pasen que sino se hacen papilla.) Con una espumadera las quitamos.
- Para escurrirlas podemos usar un paño de cocina de algodon que sea finito para que suelte el agua, o un colador. Una vez frias le agregamos los condimentos, el laurel, ajos, menta y un par de cayenas.Vamos llenando el frasco con la mezcla hasta las 3/4 partes del mismo y lo rellenamos con el aceite.
- Antes de llegar arriba vamos a presionar con una cuchara o algo para que salgan las burbujitas de aire que queda entre las berenjenas. Luego rellenamos de aceite y tapamos bien. Ya están listas las conservas de berenjenas! Puedes guardarlas un mes o simplemente usarlas al otro día.
