- Unas ramas de cebollino
- 1/4 de cebolla blanca pequeña

- Aceite de Oliva Virgen Extra

- Cortamos una rodaja gruesa de berenjena, le ponemos sal y dejamos unos 30 minutos para que suelte el amargor
- En una cazuela con agua y sal ponemos a cocer el edemame 4 minutos. Sacamos, pasamos por agua fría y escurrimos. Quitamos las vainas y reservamos
- Picamos muy pequeños la cebolla y el puerro. Los ponemos a pochar en una sartén con un poquito de aceite de oliva a fuego bajo. Cuando están blandos añadimos el edemame
- Retiramos del fuego y reservamos
- Precalentamos el horno a 180º, calor arriba y abajo
- Lavamos, secamos y salpimentamos la berenjena. La ponemos en una sartén con muy poquito aceite a fuego medio y dejamos que se haga a la plancha. Ponemos en un plato de servir
- Separamos la clara de la yema.
- Añadimos un poco de sal.a la clara y la montanos a punto de nieve duro
- Picamos el cebollino y lo añadimos a la clara. Integramos
- En una fuente de horno pinemos papel vegetal y ponemos la clara dejando un hueco en el centro. Metemos al horno unos 6-7 minutos hasta que dore
- En el hueco que habíamos dejado ponemos un poco del edemame y la yema del huevo, salpimentamos y volvemos a meter al horno 3-4 minutos para que cuaje la yema
- Pone sibre la berenjena, acompañamos con el edemame y el cebollino restantes
