  1. Comenzamos cociendo en una olla el tomate natural triturado hasta que nos reduzca un poco, hasta los 90-100 gr. aproximadamente.     Seguidamente la dividimos en porciones del tamaño deseado y volvemos amasar un poco, le damos forma,. en este caso redonda y después aplastamos un poco ligeramente) y volvemos a dejar que repose una media hora hasta que casi doble su volumen, !tenerlo en cuenta a la hora de hacer los panecillos!.
    Metemos en el horno a 180º hasta que los veamos doraditos. Sacamos y reservamos.

    Pasamos por la plancha las berenjenas en rodajas y los filetes de pollo con un poco de sal.
    Montamos nuestra apetitosa burger abriendo los panecillos, colocando una capa de salmorejo, un filete y varias rodajas de berenjenas.
  3. Servirlas tal cual o pasarlas por la plancha o sandwichera.
